The Backstory Behind Russell Barbecue

Josh Russell, the owner and pitmaster behind Russell Barbecue, didn’t grow up in the Shoals. Originally from Topeka, Kansas, Josh and his wife moved to the area in 2015. Bringing with him a Midwestern love for beef-centric barbecue, Josh began cooking at home simply because he couldn’t find the food he craved—like smoked brisket and turkey. 

What started as weekend cooking experiments soon turned into full-blown passion. After countless briskets (and a few missteps), the idea for a restaurant took hold. By Labor Day 2024, Russell Barbecue officially opened its doors.

A Building With Character—And Heart 

The building that now houses Russell Barbecue dates back to the 1920s and was in rough shape when Josh and his wife first toured it. Mold, broken windows, and a caved-in roof nearly turned them away—until they walked into the second half of the building. With its exposed brick, old metal ceiling, and a built-in stage, it was love at first sight. 

Josh and his family took on a full renovation, transforming the space into a warm, inviting restaurant while keeping its character intact. One of the most heartfelt touches? Accessibility. Their daughter Piper uses a wheelchair, so they prioritized ramps, widened doorways, and thoughtfully designed restrooms and tables to make sure the entire space was welcoming to everyone—from toddlers in strollers to seniors with walkers.

Smoked to Perfection: A Menu Full of Flavor (and Surprises) 

Russell Barbecue specializes in Texas-style barbecue: everything is cut to order, right in front of you, and served on butcher paper in a cafeteria-style tray. Their brisket is the standout favorite, but don’t sleep on the turkey—many guests say it’s the best they’ve ever had, even those who swore they didn’t like turkey. 

The housemade sauces deserve their own spotlight: 

Alabama White Sauce with a spicy twist (hello, cumin and cayenne!) 

Sweet Rib Glaze made with honey and ketchup—perfect for sticky, tender ribs 

Sweet Heat Table Sauce, a tangy all-rounder with a kick of spice 

And while these sauces aren't bottled just yet, the team is working on it due to growing demand.

The Rhythm of Community Lives at Russell Barbecue

With a built-in stage from the building’s past life as a bar, Russell Barbecue regularly hosts live music. Local artists perform most weekends, and you’ll find everything from acoustic sets to blues and soul. The restaurant is gearing up for Handy Fest in July, with live music planned daily, including lunchtime shows. 

More than just a restaurant, Russell BBQ is becoming a community gathering spot. Whether you're a local or just passing through on the North Alabama Barbecue Trail, long tables foster family-style dining and the casual, welcoming environment makes everyone feel at home.

While Josh still works full-time as an accountant, running a restaurant has introduced him to a different kind of work-life balance. The unexpected part? How much he’s enjoyed meeting customers and building relationships. Whether it's church pop-ups, catering gigs, or a friendly race with Piper through the dining room, it’s clear this place is about much more than smoked meat.
